Oven Roasted Winter Squash

A butternut comes out almost like a sweet potato. Acorn squash is more like a yellow squash.

Ingredients:

1 Winter squash (butternut, acorn, etc)
Olive oil, probably not extra virgin

Directions:

1. Preheat oven to 400 degrees.

2. Cut squash in half stem-to-stem. Remove seeds.

3. Cover with a thick layer of olive oil, both inside and on skin.

4. Place cut side down on a cookie sheet. You might also cover the cookie sheet in olive oil.

5. Bake 35-50 minutes. For a single butternut squash, 55 minutes was about perfect. For acorn squash, 50 minutes is better.
